Anarasa|how to make anarasa |traditional Maharashtra's sweet
Anarase is one of the Authentic recipe of Maharashtra.
Which is made especially in diwali .This sweet is prepared with rice and jaggery it's really very crunchy.Preparation of dough for anarasa is tendium process but end result is worth trying
ingredients
Rice -500 gm
Jagerry-500 gm
Ghee
Banana 1 tbsp
Poppy seeds
Method
1.Clean and Wash rice and soak in water for 3days.Change water every day.On third night strain the water and spread rice on a cotton cloth and allow to dry under fan .Next day grind the rice in grinder.and make the flour of it.Sieve the flour through strainer.
2.Add 500 gm jaggery mix well with rice
3.Add the mixture in blender and blend it once
4.Take this mixture in bowl and cover it and give it standing time for 2 hr . mixture will release moisture.
5.Now in this mixture add 4 tbsp ghee and one tbsp banana and knead.
6.Make big balls and keep in airtight container.
7.Keep it for fermentation process.
8.Third day again remove balls and grind it again.
9.You can observe that your dough is become soft.
10.Now keep this dough for 1 week for fermentation and dough is ready to prepare anarasa.
11.Take dough and make small lime size ball.
12.Put some poppy seeds on upper side and with finger tips make puri.
13.Deep fry in oil or ghee
when it is hot anarasa is soft so let it cool it will become crispy. Store in airtight container once cool.
